Muffins for Breakfast: Is It Really a Good Idea?

If you're following a healthy diet, you may be wondering if eating a muffin for breakfast will help you achieve your health goals. While many muffins are loaded with sweet ingredients and served up as a dessert, they don't have to be eaten as such. Making your muffins with healthy, wholesome foods and flavoring will create a breakfast dish that will help meet your health goals and keep you satisfied.

Additionally, a muffin's single-serve nature makes them a great breakfast food to indulge in on-the-go. If your mornings are rushed, and you don't have time to make a full plate of healthy food before heading out the door, eat a muffin. Making a batch of healthy muffins ahead of time and saving them for days when you're running short on time is an excellent way to ensure your body stays fueled and happy. That being said, we're not talking about munching down on a sugary chocolate muffin. The muffins we're suggesting are packed with vitamins, nutrients and fiber that fill you up and fuel you until lunchtime.

When making breakfast muffins, it's important to remember that anything goes. Enjoy your muffin as is, or dress it up to your liking. No matter how you choose to enjoy your muffin, just remember to make it healthy! Homemade jams, raw honey and yogurt are all nutritious dressings that you can add to your muffin for a flavor boost.

Lastly, if you're gluten intolerant, then muffins are an excellent breakfast option. Because muffin recipes are easily customizable, making them with gluten free flour is a piece of cake. At Bob's Red Mill, we understand how vital baking the perfect gluten free muffin is. To help, we created this Gluten Free Muffin Mix. Easy to make and delicious, it's the ideal way to make a large batch of gluten free muffins if you have celiac disease or are cooking for someone who does.

Now that you've read up on why muffins are such a great breakfast food, it's time to start baking them! Here are six of our favorite breakfast muffin recipes to help you get started.

Storing Breakfast Muffins

From pancake muffins to vegan protein muffins, once your batch of muffins is made, you'll want to keep them fresh until you're ready to eat. When it comes to muffins, they can often be hard to store. It seems like the second they're out of the oven, they start to age, and the texture doesn't remain the same. When muffins are left out too long, the muffins' moisture moves from the center to the edges. After a few days, your muffins turn into a mushy mess that's no longer enjoyable to eat.

To ensure that your muffins stay fresh and perfectly moisturized, try out these muffin-saving techniques.

Cool Your Muffins

Before storing your muffins away, you'll want to make sure they properly cool. After taking your freshly cooked muffins out of the oven, let them rest and cool for about five minutes. This will help the texture of the muffins set to retain their shape when removed from the tin. Once your muffins are cool to touch, remove them from the muffin tin and put them on a wire rack to continue cooling completely. Once thoroughly cooled, your muffins are ready to store.

Store Your Muffins in a Container

When storing your muffins, you must store them in the right kind of container. To retain moisture, muffins keep best when stored in a bread box or air tight container. Place a clean towel at the bottom of the container, and place cool muffins on top of it without layering them. Next, drape another towel on top and close the lid. Your muffins will now remain fresh for a few days!

Freeze Your Muffins

Another way to keep muffins fresh is to freeze them! Freezing is an excellent method to store muffins when making them in large batches. To freeze muffins, first place them in a plastic container on top of a couple of paper towels, without layering them. Next, cover them with more paper towels, and top the box with the lid. Place the container in the freezer, and your muffins will stay fresh for at least a few weeks!

When searching for the perfect on-the-go breakfast, there's not much better than a delicious, freshly baked muffin. Whether you love sweet or savory muffins, there's sure to be a recipe on this list that will satisfy your cravings and nutritional needs. We can't wait to see what you bake! From everyone at Bob's Red Mill, happy muffin-making!

I like the Soft Gluten Free Sandwich Bread recipe. It was wonderful the first and second times I made it. Then, what happened? It was hard. The millet flour had gone bad. The flour smelled bad and appeared to be turning a brownist purple. Yuk

I purchased fresh flour from the bin at Andy's Market in College Place. Third loaf was also hard. My daughter, lives in Portland and purchased some millet flour in smaller bags at a store there. Fourth loaf was hard. Either I am doing something wrong or the flour doesn't hold up very well. What are your thoughts and or suggestions. I sure did enjoy those first two loaves.

Hi Cleona - Hm, we haven't experience the millet flour itself turning and off-color. Please contact our Customer Service team at [email protected]
